Limoncello Lollipops


The Taste of Tulalip is just around the corner (Nov. 13 and 14), and this recipe will be the parting gift for the Friday night Italian-themed family Celebration dinner. These can also be found on our “Dolce” cart in Tulalip Bay Restaurant. For this particular recipe I’ll be using Limoncello, which is an Italian liqueur made with lemons. But can also use any liqueur on hand with great results, as well. 

Yields:  approximately 6-8

Lollipops Ingredients

¼ cup plus 1 teaspoon Limoncello

2 tablespoons cold water

¾ cup sugar

3 tablespoon corn syrup

1/8 teaspoon salt

Zest of half of a lemon

6-8 lollipop sticks

n In a heavy bottomed sauce pan, mix and bring to boil the ¼ cup Limoncello, water, sugar, corn syrup and salt. Using a candy thermometer to measure the temperature, bring the mixture to 300 degrees F.

n Remove from heat, and add the additional teaspoon of Limoncello and lemon zest. Gently swirling pan to incorporate these last ingredients.

n Quickly pour into lollipops molds that are lined with lollipop sticks or free-form the lollipops on a non-stick baking mat or parchment paper, set up with the lollipop sticks. 

n Allow to cool and harden completely before enjoying or packaging for gifts.
