Bajio Mexican Grill opens at Lakewood Crossing

The area's newest Mexican-style restaurant, Bajio Mexican Grill, celebrated its grand opening at the Lakewood Crossing Shopping Center on March 11 with a ceremonial ribbon-cutting and an open house for members of the local chambers of commerce.

Restaurant owners Steve and Jolene Bartek of Arlington said they are "elated" with the warm welcome they have received from the communities of Marysville and Arlington and their respective chambers of commerce.

Marysville mayor pro tem Jeff Seibert thanked the Barteks for choosing to locate in Marysville's Lakewood neighborhood.

"The Mayor and City Council have made a concerted effort to focus on economic development and job growth as the means to boost our tax rolls," Seibert said. "That means more money that we can put back into the community for more and better roads, more police, parks and recreation and other services that make this a great place to live, work and play."

The Barteks explained to their guests that Bajio, which translates as "the lowlands," is a region in central Mexico with a reputation for cuisine that is more sweet and fruity than typical Mexican fare. The franchise chain's décor features items made by residents of the Bajio region, as a way to provide jobs and stimulate their local economy. While Bajio Mexican Grill has a strong presence in the Southwestern U.S., the local eatery is the first Bajio franchise to open in Washington state.
